The convention is to use 90*as the nominal angle, and a V type with a movable cylinder, or a parallel type with an adjustable crank will allow adjustment of the phase angle. Adjust the angle a few degree at a time, checking the RPM and torque at each adjustment. Try 90* plus, until power drops off, go back to zero, then go 90* negative, mark the position of maximum power, it won't be too far from 90*.

It's probable that you could try 15* to 20* either side of 90*, this is a good experiment for a demonstration motor.
